AIR FRIED TOKWA'T BABOY

Ingredients

● 1-2 blocks tofu
● 1 kg pork belly slab
● 1 tbsp kosher salt
● ¼ tsp ground white pepper
● ½ tbsp white vinegar
● 1 tbsp neutral oil
● 1 tbsp soy sauce
For the sauce:
● ¼ red onion, diced
● ½ cup white vinegar
● ½ cup soy sauce
● 2 tbsps white sugar
● 5 stalks kinchay, roughly chopped ● 3 pcs sliced siling labuyo
● 1 pc sliced siling pang sigang

Instructions

  • Mix all your sauce ingredients in a bowl and set aside.
  • Slice your tofu into ½ inch-thick logs and set aside.
  • Score the flesh part of your pork belly. ½ inch deep and around 1 inch apart.
  • Combine salt and white pepper and rub on the flesh part of your pork belly.
  • Poke holes all over the skin of your pork belly and brush it with vinegar. Cover with kosher/sea salt.
  • Place the pork in 1 compartment of your Ninja Dual Zone Air Fryer. Brush the tofu in neutral oil and place it in the other compartment.
  • Air fry at 350°F for 30 minutes or until the tofu becomes golden brown and crispy
  • Once the tofu is cooked, remove it and set it aside.
  • Scrape the salt layer off the pork belly and brush the skin with neutral oil. Air fry at
  • 400°F for another 30 minutes or until the skin becomes crispy
  • Serve the Tofu and Pork Belly together alongside the dipping sauce.
