PREP TIME: 15 MINUTES

INGREDIENTS:
- 1/2 lb. trimmed green beans
- 2 tbsp. all-purpose flour
- 1 cup bread crumbs
- 2 large eggs
- Olive oil or, if available, cooking spray
- 1 thinly sliced scallion
- 2 tbsp water
- 1 tbsp soy sauce
- 1 tbsp. mirin
- 1 1/2 tsp. fresh calamansi juice
INSTRUCTIONS:
- In a large bowl, toss beans with flour until coated. In a shallow bowl, break up bread crumbs with your hands into smaller bits to help them adhere to the beans.
- In another shallow bowl, beat the eggs to blend.
Shake off excess flour from beans. Dip into eggs, then breadcrumbs, and gently press. - Work in batches. Spray oil in the air fryer basket with cooking spray. Arrange beans in a single layer and spray beans with cooking spray.
- Cook at 350°, flipping halfway through, until the crust is golden and the beans are tender, 10 to 12 minutes.
- In a medium bowl, whisk scallion, water, soy sauce, mirin, and lemon juice.
- Serve beans with sauce alongside.
