Prepare eggplants: Grill or roast eggplants until the skin is charred and the flesh is soft. Peel off the skin carefully, keeping the stem intact.
Flatten eggplants: Gently press the eggplant flesh with a fork to flatten it without breaking apart.
Make egg mixture: Beat eggs in a bowl, season with salt and pepper. For extra crispiness, whisk in flour and breadcrumbs.
Coat eggplants: Dip flattened eggplants into the egg mixture until fully coated.
Cook in Ninja CRISPi: Place coated eggplants in the Ninja CRISPi basket. Lightly spray with cooking oil. Air crisp at 375°F (190°C) for 8–10 minutes per side until golden brown.
Serve: Enjoy hot with rice, ketchup, or dipping sauce of choice.
