PREP TIME: 7-10 MINUTES
INGREDIENTS:
- 2 tbsp extra-virgin olive oil
- 3 cups spinach
- 2 cups basil
- 1/2 diced onion (sautéed)
- 2 garlic cloves, chopped (sautéed)
- 1/2 cup white beans (if available)
- 1/3 cup raw pistachios
- 1 cup grated parmesan cheese
- 1 tsp salt
- 1/3 cup pasta water
- burrata (optional or if available)
- 7-10 fresh basil leaves
- parmesan cheese
- red chili flakes and pepper, to taste
INSTRUCTIONS:
- Add 2 tbsp extra virgin olive oil and a little bit of pasta water to your Ninja Nutri.
- Add blanched spinach, and basil along with your sautéed onion and garlic and blend again.
- Add 1 cup of white beans and blend again until smooth.
- Add pistachios, salt, pasta water, and grated parmesan cheese and blend one final time.
- Add your sauce to cooked pasta and top with burrata, a drizzle of olive oil, red chili flakes, fresh basil, salt, and pepper.
- Serve immediately and enjoy!
