SINIGANG LIEMPO AND KANGKONG FRIED RICE

Enjoy crunchy pork belly and savory sour rice with this Ninja CRISPi Sinigang Liempo and Kangkong Fried Rice recipe. A complete Filipino meal in one pot!

Ingredients

  • 2 to 3 slices of pork liempo (pork belly), cut into bite-sized pieces
  • 1 pack (22g) sinigang mix powder
  • Chopped onion and garlic
  • Cooked rice
  • Chopped kangkong (water spinach) leaves
  • Cooking oil (or oil spray)

Instructions

Marinate Meat: In a small bowl, toss the pork liempo pieces with 1 teaspoon of the sinigang mix, a little bit of the chopped garlic and onion, and a drizzle of oil. Massage the seasoning well into the meat.

Air Fry Pork: Put the seasoned liempo into the CRISPi glass bowl and air fry for 15 minutes. Once crisp and cooked, transfer the pork to a side plate.

Mix the Rice: In the same glass bowl (keeping any flavorful leftover pork fat), add your cooked rice, remaining onion and garlic, and the chopped kangkong leaves. Sprinkle the remaining sinigang mix powder evenly across the rice and stir everything together thoroughly.

Combine & Fry: Arrange your cooked pork liempo slices neatly on top of the seasoned rice mixture, and finish with a drizzle or spray of oil.

Fry Mode: Use Fry mode for 10 to 12 minutes until the rice is hot and the pork reaches your preferred level of crispiness. Toss together or serve as layered!
