AIR FRIED CHXN INASAL WITH KALE CHIPS

Ingredients

● 250g washed and dried kale
● 2 tbsps olive oil
● ¼ tsp sea salt
● 2 chicken leg quarters
● 1 thumb ginger, peeled and grated
● 1 clove finely minced garlic
● 2 stalks of lemon grass
● juice of 5 calamansi
● ½ tbsp fish sauce
● ⅛ tsp salt
● ½ tsp sugar
● 2 tbsps of annato oil

Instructions

  • Combine your ginger, garlic, lemongrass, fish sauce, salt, calamansi, annato oil, and sugar in a bowl.
  • Marinate your chicken legs in your mixture for 3 hours to overnight.
  • When ready to cook, prepare your kale by taking them out of the stalks.
  • Toss your kale in olive oil.
  • In 1 compartment of your Ninja Dual Zone Air Fryer, add in your marinated chicken.
    In the other compartment, add in your kale.
  • Air fry for 300 deg F for 20 minutes.
  • After 20 minutes or when the kale starts to get crispy, take it out and sprinkle with sea salt.
  • Baste your chicken leg quarters with its marinade and keep air frying until
    cooked all the way through. This will take approximately another 15-20 minutes.
  • Once cooked, serve the chicken and kale together.
