- Combine your ginger, garlic, lemongrass, fish sauce, salt, calamansi, annato oil, and sugar in a bowl.
- Marinate your chicken legs in your mixture for 3 hours to overnight.
- When ready to cook, prepare your kale by taking them out of the stalks.
- Toss your kale in olive oil.
- In 1 compartment of your Ninja Dual Zone Air Fryer, add in your marinated chicken.
In the other compartment, add in your kale. - Air fry for 300 deg F for 20 minutes.
- After 20 minutes or when the kale starts to get crispy, take it out and sprinkle with sea salt.
- Baste your chicken leg quarters with its marinade and keep air frying until
cooked all the way through. This will take approximately another 15-20 minutes. - Once cooked, serve the chicken and kale together.
