INGREDIENTS:

2 medium peeled and chopped carrots

1 tbsp butter

2 tbsp brown sugar

Pinch of salt

½ tsp cinnamon

¼ tsp nutmeg

½ cup whole milk

¾ cup heavy cream
- ½ cup sweetened condensed milk
INSTRUCTIONS:

Roast the carrots: Toss chopped carrots with butter, brown sugar, salt, cinnamon, and nutmeg. Roast at 200°C (400°F) for 25–30 minutes until soft and caramelized.

Make the purée: Blend the roasted carrots with the milk until smooth. Let it cool completely.

Mix the base: In a bowl, combine the carrot purée, heavy cream, and sweetened condensed milk. Stir until well mixed.
- Freeze: Pour the mixture into your Ninja™ CREAMi™ ice cream maker for home pint container. Freeze for at least 24 hours until solid.
- Process: Insert the frozen pint into the CREAMi™ and select the Ice Cream function. If needed, use the Re-Spin function for a creamier texture.
