CARROT ICE CREAM

INGREDIENTS:

  • 2 medium peeled and chopped carrots
  • 1 tbsp butter
  • 2 tbsp brown sugar
  • Pinch of salt
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup whole milk
  • ¾ cup heavy cream
  • ½ cup sweetened condensed milk

INSTRUCTIONS:

  • Roast the carrots: Toss chopped carrots with butter, brown sugar, salt, cinnamon, and nutmeg. Roast at 200°C (400°F) for 25–30 minutes until soft and caramelized.
  • Make the purée: Blend the roasted carrots with the milk until smooth. Let it cool completely.
  • Mix the base: In a bowl, combine the carrot purée, heavy cream, and sweetened condensed milk. Stir until well mixed.
  • Freeze: Pour the mixture into your Ninja™ CREAMi™ ice cream maker for home pint container. Freeze for at least 24 hours until solid.
  • Process: Insert the frozen pint into the CREAMi™ and select the Ice Cream function. If needed, use the Re-Spin function for a creamier texture.
