GRILLED PAMPANO WITH LIME CHIMICHURRI

Ingredients

●1 clove garlic
● ½ cup parsley
● ½ cup cilantro
● 1 tablespoon red wine vinegar
● Juice of 2 limes
● 1 tsp chili flakes
● 1 cup olive oil
● salt and pepper to taste
● 2 pieces pampano (pomfret)
● Oil for brushing the grill

Instructions

  • Combine your garlic, parsley, cilantro, red wine vinegar, lime juice, chili 
    flakes, olive oil, salt, and pepper in a food processor or blender.
  • Blitz until blended. Do NOT puree. You can also use a mortar and pestle for this step, and just add the vinegar and lime juice after.
  • Set aside your chimichurri.
  • Clean your fish and score it. Stuff your pampano with around 2 tablespoons of your lime chimichurri.
  •  Preheat your grill to 300 deg F 6. Brush both the grill and the fish with any neutral oil .
  • Grill on both sides while covering the lid of the Ninja Foodi Smart XL Grill to cook the insides of the fish.
  • Use the temperature probes. Once your fish has reached an internal cooking temperature of 145°F, take it out.
  • Serve your fish with more of your lime chimichurri spooned on top.
