GRILLED PAMPANO WITH LIME CHIMICHURRI

- Combine your garlic, parsley, cilantro, red wine vinegar, lime juice, chili
flakes, olive oil, salt, and pepper in a food processor or blender. - Blitz until blended. Do NOT puree. You can also use a mortar and pestle for this step, and just add the vinegar and lime juice after.
- Set aside your chimichurri.
- Clean your fish and score it. Stuff your pampano with around 2 tablespoons of your lime chimichurri.
- Preheat your grill to 300 deg F 6. Brush both the grill and the fish with any neutral oil .
- Grill on both sides while covering the lid of the Ninja Foodi Smart XL Grill to cook the insides of the fish.
- Use the temperature probes. Once your fish has reached an internal cooking temperature of 145°F, take it out.
- Serve your fish with more of your lime chimichurri spooned on top.
