AIR FRYED FISH AND CHIPS

INGREDIENTS:

  • 2 large egg whites
  • 2 5-oz of salt and vinegar
  • 3-4 cups of crushed potato chips
  • 3-inch pieces cut, 1 1/2 lb.cod fillets
  • 1 tbsp olive oil, (leave some for spraying)
  • 16 oz frozen peas, thawed
  • 1 tsp grated lemon zest
  • 2 tbsp of lemon juice
  • salt and pepper to taste
  • raw thinly sliced potato (if available)

INSTRUCTIONS:

  • Heat your air fryer to 400°F.
  • In a shallow bowl, beat egg whites and 1 tablespoon water.
  • Place chips in the second shallow bowl. Dip fish in egg whites, letting excess drip off, then add the crushed chips, pressing gently to help adhere.
  • Spray the Ninja dual zone air fryer baskets with olive oil, arrange fish in the basket, and air-fry until golden brown and opaque throughout, together with the thin slice potato (if available) in another basket, for all 10 minutes.
  • In a bowl, microwave peas on medium for 2 minutes. Toss with lemon zest and juice, 1 tablespoon oil, and ½ teaspoon each salt and pepper, then mash.
  • Serve with fish. Enjoy!
