SPINACH ARTICHOKE DIP

INGREDIENTS: 

  • 20 oz spinach
  • 1/4 cup, finely diced white onion
  • 4, minced garlic cloves
  • 8 oz, softened cream cheese
  • 1 1/4 cups cheese (mixture of pecorino romano, mozzarella, and gruyere -or similar)
  • 1 cup sour cream
  • 1/4 cup mayo
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • salt and pepper to taste
  • a pinch of nutmeg
  • 400 grams of roughly chopped artichoke

INSTRUCTIONS:

  • In a saucepan, melt butter over medium heat. Add your onions and garlic, and sauté for a few minutes.
  • Add your spinach and cover until wilted.
  • Strain the spinach to remove excess water.
  • Add your sour cream, cream cheese, mayo, spinach, artichoke, and seasonings to your Ninja Nutri-Blender Pro.
  • Start your blender pro and process until everything is combined well.
  • Pour into a bowl, add your cheese and nutmeg. Mix until well combined (OPTIONAL STEP: Place in a baking dish and bake at 350F for 25 minutes.)
