PREP TIME: 1 HOUR
INGREDIENTS:
- 35 oz of tomatoes
- 1/2 red bell pepper
- 1 medium-sized onion
- 2 garlic cloves
- 3 tbsp olive oil
- salt and pepper, to taste
- 5-15 pieces of oregano leaves
- 5-10 pieces of thyme
- 5-10 pieces of fresh basil
INSTRUCTIONS:
- Preheat your oven to 390 degrees Fahrenheit.
- Slice tomatoes in half and place cut side down onto a baking sheet. Add bell pepper, onion, garlic, olive oil, salt, pepper, oregano, and thyme.
- Bake for 30-45 minutes or until the tomatoes are tender and browned.
